I knew that I had to get my hands on some trending products that I have been seeing all over the internet, and when I saw these nightstands, I instantly fell in love! These mid century modern nightstands were the perfect addition to our primary bedroom. I have been searching and searching for just the right bedside tables that also didn’t break the bank! For our primary bedroom, I wanted it to feel modern and moody with a splash of color. As soon as I went to check out The Home Depot, I found myself between these nightstands and these ones! I ultimately felt like the rattan textured drawer would compliment our dresser and curtains so well. I am BEYOND happy with my choice. They arrived promptly and were easy to put together [I did it all by myself, woo!] This was definitely an upgrade from our previous side tables – my husband and I keep calling them our “grown up nightstands” 🤣 If you are in the market to give your bedroom a little refresh, I cannot recommend these bedside tables enough!

Heading out of the bedroom and into the kitchen, I finally got my hands on the Instant Pot Stainless Steel Air Frying Oven! I have been wanting to update my air fryer for some time now. I really wanted to make the switch from a plastic, non-stick air fryer to a completely stainless steel one! Not only does the Instant Pot Stainless Steel Air Frying Oven have more features and capabilities, it is also a healthier alternative to cooking with Teflon! It is important to me and my family to be cooking with non-toxic cookware! And oh man let me tell you, this air fryer did NOT disappoint! It has the ability to air fry, bake, broil, dehydrate, roast, reheat and more! Not to mention, the size is amazing for actually cooking all of your goodies at once [say goodbye to two batches!] It also features an adjustable oven rack, a stainless steel wire food rack, a cooking sheet and a removable drip tray! We’ve already made so many yummy things in this little oven – pizza, taquitos, fried tofu, garlic bread – you name it! It has easily become a kitchen appliance that we reach for again and again!

I recently whipped up some vegan jackfruit taquitos and it was SO easy popping them in the air fryer and cooking them for just a little over 5 minutes [this thing is EFFICIENT]. Not only were they tasty, but they were cooked to perfection! Snag yourself the recipe below!

Easy Air Fryer Jackfruit Taquitos

Jackfruit Taquitos

  • 1
    Package
    Small Flour Tortillas
  • 1
    16 oz
    Canned Jackfruit
    [can use fresh jackfruit as well!]
  • 1
    16 oz
    Canned Refried Black Beans
    [or make it yourself!]
  • 1
    7 oz
    Chipotle Peppers in Adobo Sauce
  • ½
    Packet
    Taco Seasoning of Choice
    [we like to get an extra spicy one!]
  • 1
    tsp
    Onion Powder
  • 1
    tsp
    Garlic Powder

Vegan Elote Corn

  • 1
    16 oz
    Canned Sweet Corn
  • ½
    Cup
    Vegan Mayo
  • 1
    Tbsp
    Nutritional Yeast
  • 1
    tsp
    Paprika
  • 1
    tsp
    Red Cayenne Pepper
  • ½
    tsp
    Salt
  • ½
    tsp
    Pepper

Vegan Chipotle Sauce

  • 1
    Cup
    Raw Cashews
  • ½
    Cup
    Nutritional Yeast
  • ¾
    Cup
    Water
  • 3
    Chipotle Peppers from Can of Adobo Sauce
  • 1
    tsp
    Garlic Powder
  • 1
    tsp
    Onion Powder
  • ½
    tsp
    Salt

Jackfruit Taquitos

  1. Drain and rinse jackfruit, use hands or meat masher to break up jackfruit and remove any hard centers or “cores.”

  2. In a skillet in medium heat add shredded jackfruit with a neutral oil. Add garlic and onion powder and saute for 1-2 minutes.

  3. Add 2-3 chipotle peppers to sauce pan [for extra spice add some of the adobo sauce in as well!] Stir well and saute for another 1-2 minutes.

  4. Add your taco seasoning or spices of choice and saute for 10 minutes.

  5. Cover sauce pan and return heat to low heat.

  6. Use about 1 Tbsp of refried beans and spread across a tortilla.

  7. Add 1½ Tbsp of jackfruit to tortilla [be sure to spread it out evenly!] Roll tortilla tightly and set in wire rack.

  8. Repeat process until all of jackfruit is used!

  9. Spray a neutral oil on rolled tortillas before placing into the air fryer.

  10. Select air fry and set to 400 degrees for 5 minutes. Once time is up use your judgement and preference if you wish to cook taquitos longer.

  11. Remove from air fryer, serve and enjoy!

Vegan Elote Corn

  1. Drain and rinse corn, add to a large mixing bowl.

  2. Combine vegan mayo, nutritional yeast, and spices and stir.

  3. Keep cool until ready to serve!

Vegan Chipotle Sauce

  1. Add all ingredients to a blender and blend on high for about 2 minutes.
