In Paris, bread is an artwork shape and everybody has reviews about the most productive artists. There’s a boulangerie — or a bread bakery — on nearly each and every nook within the Town of Lighting, and about as many forms of bread to make a choice from: vintage, crusty golden baguettes; ache de seigle rye loaves; and buttery, flaky brioche. Many bread bakers adhere to old-school traditions, making loaves that feel and look like peasant breads of yore, whilst others are decidedly new-school, making the whole thing from American-style sourdough to babkas and focaccias.
Purchasing baguettes for a cocktail party? Cross forward and tear off the nez — the nostril, or pointy finish — of the baguette to your far more than. It’s French custom that the baguette purchaser is permitted to take a bit praise.
